Hi, today's DEF blades are never ALL.
Just my 2 cents.

Better go for some real ALL blade with bigger head and handle.

Or if you want a real ALL blade for your purpose - I could offer you with Imperial Scholer ST blade made in Germany in 70's. Blade is 90 grams with a very good balance, ST handle and has a real stopping skills with very good spin. Send me p.m if you are interested.

Today's blades for defense are faster, because and the game is faster as all.

I have a Defense III and a Defense X, but not a Defense Pro.  The Defense Pro is thinner and larger than the Defense III.  The Defense III is also slightly (and I do mean only slightly) faster. They're both pretty quick for defensive blades.

Assuming this spectrum for blades:
(Slowest) All-  All  All+  Def-  Def  Def+  Off-  Off  Off+ (Fastest)

I'd categorize the Defense III as Def+, and the Defense X as Def.

As for what you're looking for, I really like the Victas Mastushita.  It's slower than either blade and more in the All category.

I think the ratings for defensive blades are quite misleading.  I've played with Koji Mat and Kim Kyung-Ah, both rated DEF or DEF+.  They are quite lively if you play close to the table.  Blades that are meant for long distance defense need to have some speed to propel the ball from way back.
