What happened to his CNT career? He was doing well in the early eighties then nothing. Is it that Jiang Jialing ousted him, or did he p-off the coaches by losing some important match?

The latter.  He was expected by CNT to be an equal to Chen Longcan, but underachieved.

I believe he uses 802, I heard a rumor saying he has a second setup with more spinny 802-40. I don't think you really want pips on your backhand unless it is really punching, you will also need extra footwork to get the ball before/on the top of the bounce.

what would you recommend? 1.5 or 2.0 802-40 or just 802? just for experiment of course

He Zhi Wen has two rackets. On one of them he has red 802 over TSP spectol speed sponge 2.0 mm. On the other one - black Haifu Dolphin. Blade is PF4-032.

Speaking as an sp hitter blocker i find the 40 mm ball really helps because its so easy to soft block and make the looper play from near the floor. Against the better loopers you have mix the soft one with fast punch blocks otherwise they work out how to fix their timing

HZW's returns are with sharp angles, rarely backs away from the table, makes his opponents run.
He has never been ranked high, but has never dropped out of the ITTF top 100 for a good 11 years.  HZW has played lots of world top players.  He is 50, still looks like he has a few more years to go.
